The main ingredients of a classic Filipino Adobo are Vinegar, Garlic, Soy sauce, Laurel leaves, whole or cracked peppercorn, and a bit of sugar (optional). Adobo comes from the Spanish word Adobar which means to marinate. The initial process of cooking Adobo is to marinate the meat in vinegar, soy sauce, garlic and peppercorn. Then add some water on the marinade and slowly boil, cook until tender and add the rest of the ingredients. Two ways of cooking adobo is to cook it with lots of sauce, or to cook it until the sauce thickens and the oil comes out. Either way, it is best to enjoy adobo with steamed white rice.<\/p>\n\n\n\n

It is believed that the Filipino Adobo originated from the needs of Filipinos to preserve the meat. With the absence of refrigerator and freezer at that time, it is a problem for them on how to make the fresh meats last longer. During those time, people butchered their pigs, cows and chickens for the festivities which sometimes lasted for a week or more, they have to develop a cooking method that will make meat last longer without getting spoiled. And that is the start of Filipino Adobo, because the main ingredient is vinegar, it serves as preservative and the resulting dish is not only tasty but tastes much better as it stays longer and being reheated several times.<\/p>\n\n\n\n
